Chicken dinners are staple here for busy weeknights. They’re relatively cheap. There’s a lot of variety without a lot of work ( usually) and as a bonus my kids tend to eat most of the chicken dinner ideas I drum up. But I’ll be honest.
Eating Chicken for all of our weekly meals…can be…well. Fucking boring.
That’s why I’ve compiled an epic list of the best chicken recipes that will keep you and your family fed on a busy night, and get you out of an otherwise food rut.
Pro tip: you’re gonna have to go into this list of chicken dinners with a bit of an open mind. A blank canvas if you will. I hope your taste buds are ready because the next time you serve dinner for the whole family it’s gonna be…different.

Some of these chicken breast dinners actually suggest using chicken thighs, which are super yummy and very budget-friendly.
But if chicken thigh dinner recipes aren’t your thing, no worries!
Just substitute chicken breasts and add a little bit more cooking time to adjust for the extra thickness of the breasts. You can also substitute skinless chicken breasts for your weeknight dinners.

Easy Chicken Breast Dinners for When You’re Bored of Chicken
The one-pan chicken breast dinner is your next best friend.
A few of these recipes below also utilize chicken thighs and honestly, I prefer them in some contexts because a) they’re cheap and b) they’re delicious. But I’ve totally made them with chicken breasts as well and it’s just as good.
One Pan Lemon Garlic Chicken
I love that it’s all done in one pan and if you want you can even cook your rice in the remaining dregs of the sauce to really up the flavor quotient.
If you’re new here, this will become your favorite dinner.
We eat this at least once a week, and I vary it enough that it doesn’t feel like its the same thing (hot tip don’t make it with the same veggies every time!) It’s just as yummy with chicken thighs or with plain chicken breasts. you could even substitute red meat and ground beef patties could be another great alternative.

Balsamic Glazed Caprese Chicken
This one is admittedly a bit fancier but it’s still one pan (that goes in and out of the oven so it’s best if you have a pan like a cast iron pan or a pyrex that can go back and forth without too much hassle).
I love the Italian flavors of this one and it’s so good with some pasta or if you’re doing low carb, some sauteed spinach on the side. It’s a really easy way to turn your boring chicken breast into an easy dish. Make sure to test that internal temperature of your chicken though so that it’s totally done, (160 degrees baby! )
I love fried chicken so much but I hate the extra oil/fat that’s involved in actually frying it.
Enter Baked fried chicken (whuuuuttt?) This recipe is exactly like it sounds: The best. I love the seasoning mix and panko bread crumbs make the crust super crunchy and yummy.
Pro-tip, double up on the panko/egg batter and double-dip/re-do it. This is the kind of mouth-watering tender chicken.
Not only is this Chicken dinner a one-pan wonder, but it’s also done in about 15 minutes flat. A healthy option for those craving their favorite asian dishes.
This is a one-pan chicken dish that is also keto-friendly. I serve with white rice or cauliflower rice.
One – Skillet Sweet and Salty Chicken Thighs
You could even substitute pork chops for this. Any lean meat will likely provide the same end result: A delicious, easy, healthy dinner that reheats LOVELY the next day.
Skillet Chicken with Mexican Green Rice
It’s so flavorful and so affordable, and when it’s all in one pan it’s momma friendly because that means my ass has less shit to clean up after dinner. It’s also super toddler-friendly.
This is one of those easy and healthy dishes that you can throw together with whatever veggies you have left in the house.
If you buy the pre-cooked rice then toss that in the microwave for less clean-up. Otherwise, make your rice alongside this dish to make it a two-pan meal.
Chicken Stuffed With Bacon and Goat Cheese
This is so decadent and so yummy and so easy it’s stupid. If you buy pre-cooked bacon that will help make this a one-pan meal, otherwise you’ll need to fry up some bacon first (but we just use the same pan we made the bacon in to cook the rest of the meal which goes from stove to oven).
Easy Chicken Breast Dinner Favorites For When You’re Tired of Chicken
If you’re in the mood for cooking or if you just want to switch up the routine of what you’ve been making these weeknight chicken breast dinner favorites are perfect.
They’re also really great if you’re hosting a dinner party or if you just wanna make it a date night at home.
Stop everything and make this meal.
It’s a bit complex so it’s a really good one to have on a Sunday when you may have more time to spare to get your dinner on the table. But it’s heaven in a dish I tell you.
The sauce in this is so delicious my husband thought it was a soup and wanted to eat it straight out of the pan. It’s not a soup. But it’s really yummy over pasta, rice or cauliflower rice.
‘This one is definitely Keto-friendly if that’s your jam.
Ps. I don’t like sun-dried tomatoes and I totally just didn’t add them. Didn’t affect the taste at all.

Low Carb French Garlic Chicken
I love french food. I also love dishes that are simple to make on a weeknight and also decadent enough to serve for a dinner party and this is one of those dishes.
Toss some string beans and add some pasta and you’ve got gourmet at your dinner table. You could use garlic powder too if you’re low on garlic.
Also a favorite in my house. I love how refreshing and comforting this dish is.
